I’ve found that the best recipes are always created in an impromptu situation when you have people to feed and you want to serve them good food. One of my favorite recipes is njansang chicken that I made when my sister and I had more guests turn up than were expected. I had to come up with something fast as the fish I was grilling wasn’t going to be enough for everyone. I mixed tomatoes, onion, ginger garlic, oil and then on a whim added some njansang to give it that extra kick and cooked these together in a small saucepan. I then coated the chicken (which by this time was defrosted) in the mixture and put this under the grill as well. It turned out to be delicious and I received lots of compliments of the “you put bobbie inside dis chicken” sort. Needless to say, I’ve recreated this several times and I think it works especially well with chicken thighs and my all-time favorite, chicken wings.
I read somewhere that you should approach cooking and love with complete abandon! That’s certainly true of cooking and it’s always good to be adventurous. Watch what others do and put your own spin to it. Use seasonal ingredients in creative ways. I love pork chops and now I grill them, but use our local spices to pack in that flavor! Check out my grilled pork chops with pumpkin mash. I boiled the pumpkin in some leftover chicken stock and spiced it with salt and fresh pepper. I think some dry pepper would give it an extra kick, so I’ll try it like that next time. Get inspired and enjoy!
